Here’s one about the new synthetic drugs taking over worse than fentanyl. The addiction crisis is really starting to get bad. Personally I’ve been self medicating with street benzos to kill the alcohol cravings and that is presenting its own issues. I just lost a friend a couple months ago who died from a seizure after going cold Turkey from alcohol. I’ve had around 3 other people I’ve known from high school bite the dust since the beginning of the pandemic from opioids. My sister is now addicted to fentanyl. The addiction crisis is absolutely nuts right now. I know several other people that seem to be going down a bad road regarding substance use.

I really enjoy Kenji Lopez-Alt's YouTube channel. I'm always trying to learn how to be a better home cook. The way they explain the reason certain methods work, or how they work really resonates with me. "Because that's just the way it is done" is not a sufficient answer for my curious mind. I must know the why or else I cannot rest.

I used a variation of this recipe for dinner the other night and my wife absolutely loved it. I also made Pork Chili Verde from one of Kenji's videos, and it was probably one of the best things I've ever made on my own.
Check out Milk Street on PBS, they do a good job of explaining why, as well as The French Chef on Magnolia (yeah, I know it's ancient, but she does explain the reasoning of things a bit, but Milk Street does a bit more explanation (and their magazine goes deeper than the TV show)).

Once I became old enough to have to cook for myself, I'd call my mother and learn that every "family recipe" I loved can be found on the back of a box or can.
Ha, that was kinda my family, but my dad did add extra stuff to make it "his"... When we moved in to our new house 5-6 years ago, it had a great gas range, and we've been cooking stuff like crazy since then.
Be warned, Milk Street can be crazy detailed, we love most of their recipes (subscribed since the charter issue), but some can be nuts - take 3 things, mix them up, set them aside, mix 3 more things up, saute them, then add stuff to it, then cook some more, then add the first 3 things, then put it in the oven, make the topping (after toasting and chopping up Szechuan peppercorns and 2 more spices) and when it comes out of the oven, put the topping on. And then you eat in 10 minutes what took you an hour to do. :p The magazine is even more detailed than the TV show, if you really want to get into it. Also, America's Test Kitchen is where Christopher Kimball (founder of Milk Street) came from, and I believe they're also on PBS, they're the same type of thing, and both MS and ATK have tons of cookbooks out.
