So I've been living in Los Angeles for a few years now and have been missing the OKC mexican staples like Ted's, Poblano Grill, and Chelino's. Here in LA, everything mexican is "baja style", which is californian for "crap."

I've searched online for recipes, anything that would hold me over until I can visit family again there, but sadly, there isn't anything on the internet.

So, dear friends of the OKCTalk universe, I'm praying that at least one of you has a queso recipe, chili relleno recipe, or anything that would serve as a blueprint for making a dish that ultimately could be called Tex-Mex(or Okla-Mex, if you will). And please don't just make something up. That's not cool. I'm looking for genuine, restaurant gold.

Queso is preferred.

Having lived out there for many years...might be a good idea to embrace the local food (develop a love for cilantro) rather than try to emulate what you remember. I suggest avoiding the local "milk-guts" tacos...though...
