I heard Paul George's Wednesday press conference is at the Jones Assembly. That's interesting. I don't think the Thunder have had a press conference at a venue like this.

Yes, this is true.

They had planned to open Tuesday but put things back to Thursday evening so they could host the event then reconfigure the venue for dinner the next day.

I'm assuming these press conferences are a journalist/invitation only type of thing? It would obviously be cool if anyone could show up to see it in person but I know that's probably not how it works.
